Gingerbread Birthday/Christmas Cake with Mascarpone Frosting

Today, I have a cross between a birthday and Christmas cake to celebrate maaah biiirthdaaaaay! 

It’s a Martha Stewart number, so you know its gonna kick gingery butt. I can say that today too, because I am sitting on a bed in downtown Manhattan. Obviously, this information grants me complete access to say things like ass and butt, especially now that I am a 21-year-old adult.
I have to mention just how beautiful this cake was in my mouth. The cake has both ground and fresh ginger, so you already know its gonna be fiery as hell. It’s not too overpowering though, because it’s rounded off with nutmeg and cinnamon (cue festiveness). 

The little Christmas decs on top are completely inedible, apart from the snowman, which might be why he took center stage. 

There is a lot of liquid in the cake better, in fact, a whole cup of boiling water! Do not fret. This a good thing. The cake is so moist because of it.
As for the frosting, I know it looks a bit yellow, but that’s only because I bought ‘golden’ icing sugar, please don't make the same mistake! There is a whole tub of mascarpone AND cream cheese in there, and only a *slightly* detrimental-to-your-health amount of sugar. Oh, its so creamy. You wont be able to resist licking the entire top, side and bottoms of the cake.  You probably shouldn’t do that though, it might be your birthday an all but its worth thinking about others before diving head first into an 8 inch 3 layer cake.
I copied this cake straight from Martha Stewart online, so I’m not going to rewrite the whole thing out. Saying that, I should note that I ran out of ground ginger so I used half a tablespoon, I also added more icing sugar than necessary to give the frosting a more spreadable consistency.

    There is nothing gingerbread-y that Martha touches that doesn't turn to pure gold, so I am going to go ahead and assume this one is just as incredible. And SO pretty! That's all you - your cakes are always so gorgeous! Can you come decorate a birthday cake for me too?!

    I hope you had an amazing birthday. Over here, 21 is a big deal, so we like to make sure you do it up right. I hope you're drinking lots in NY, since you can legally do so now.
