2 medium eggs
1/4 tsp ground cinnamon
1 large mashed banana
1 tsp baking powder
Light cooking oil for frying
The Method:
Peel and mash the banana in a large bowl using a potato masher.
In a separate, smaller bowl whisk the eggs with a fork and then slowly add them to the mashed banana.
Lastly add in the baking powder and cinnamon (optional) and mix until just incorporated.
Pour the mixture into a measuring jug and set aside.
Add a very small amount of oil to a frying pan and heat on high for 1 minute.
Pour a small circle of batter into the pan and cook until golden brown on both sides - about half a minute.
Serve warm with syrup, fruit or cream.
oh myy I want pancakes now. I strangely like making mine without sugar, and extra butter, I think they taste nicer!

you're completely right on that one, pancakes taste way better without sugar added in the batter.

ReplyDeletePancakes are like my everything food, so now that I'm trying to eat healthier I'm working on different variations with healthier alternatives. My favourite thus far is adding two palmfuls of ground flaxseed and a lot of cinnamon. Delish!
