Graham Cracker Sandwiches with Dulce De Leche Truffle Filing



I usually find myself daydreaming of ways I can incorporate caramel and chocolate into a sweet something or another. I never ever ever get sick of the almighty caramel and chocolate combination, but then again, have you ever met a girl of 20 who would tell you otherwise? 

I’ve layered caramel and dulce de lech in brownies, I’ve paired it with shortbread and dumped un-tempered chocolate straight over the top, and I’ve also blended a banana in it. 
Here, I have squashed a chocolate caramel truffle filling and dulce de leche between graham crackers. The difference between these and digestives? Grammy C’s are more brittle and snap when broken apart. I cannot wait to hoard several packets of the stuff when I land in America next month. This recipe for GC’s carries some spice, along with a whole lot of crunch, which goes so well with the salty soft center. 

It only seemed fair to pay tribute to the two ingredients featured heavily on my blog on its second birthday. Two whole amazing years of blogging plus two of my favourite pairings should only ever be accompanied by a pretty special giveaway, right?

Graham Cracker Sandwiches with Dulce De Leche Truffle Filing

Graham Cracker recipe adapted from Miette Bakery Cookbook: Graham Crackers 

Graham Crackers:
1 1/2 cup (198g) plain flour 
1/2 cup (43g) whole wheat plain flour
1/2 tsp salt 
1 tsp ground cinnamon 
2/3 cup (170g) unsalted butter, softened 
1/2 cup firmly packed (113g) dark brown sugar 
2 tbsp honey

Makes 48 three inch cookies 

Filling:
150ml double cream
170g dark chocolate
70g ( + more to spread inside cookie) dulce de leche
Sea salt for sprinkling x 2

The Method

Start truffle filling. Melt chocolate over ban marie. Once melted, add dulce and whisk until smooth. Pour in cream and salt and stir until combined. Cover and leave overnight to stiffen in a dry place. 

Make the crackers. Sift together the dry ingredients & set aside. Cream the butter, sugar and honey for 5 minutes. Add the dry ingredients in thirds, add the next addition when the flour has only just incorporated. Chill in clingfilm for half an hour or up to 2 days. 

Make sandwiches. Preheat oven to 180 C. Roll out the chilled dough 1/4 inch thick and cut out cookies using a 3 inch scalloped edge round cutter. Place on cookie sheet lined with parchment paper making sure they're 1/2 inch apart. Bake for `12 minutes until slightly darker in colour. 

Whisk chocolate truffle until lighter in colour and spreadable. Cool cookies on rack, spread a thin layer of dulce de leche over half of the cookies and sprinkle salt over the top. Spread a thicker layer of truffle over the 2nd half of cookies, and sandwich the two together. Will keep for 2 weeks if airtight.

    Those look very very good. I made my first cinnamon rolls the other day and whilst they were pretty good I couldn't say they were the best (first attempt and all that) so I'll have to give your recipe a go.

  7. Happy blogbirthday! Love these adorable little cookies. You are officially the queen of homemade versions of typically store bought stuff between this and the pop tarts. I can think of so many wonderful ways to use these grahams but these sandwiches rank pretty high. I know I'm too late and on the wrong continent, but I wish I could enter your raffle. The class sounds so interesting. I haven't had much Nordic food before!
