Gold Dust White and Dark Chocolate Chip Coconut Cookies

There might be a white and dark chocolate chip coconut cookie beneath that thick sheen of radiant gold. There might also be a fat free black-eyed pea chip variation, and that stuff on top could be made of 24-carrot edible gold. Let’s be serious though. It’s Christmas very soon and your friends and family wont mind shitting out indigestible lustre dust. When there are homemade cookies blurring their vision, the people will eat.
Wrap them up in real girth-y ribbon and give these out as naked gifts, or, arrange them neatly on your super sweet Christmas town plate and share them with whoever walks through the front door. You should probably call the entire neighbourhood over because this recipe will make 18 extra large cookies. Scale them down from 75g portion sizes to 35g and you could easily feed 40.   
I’ve only tested this recipe once, but I can already vouch for it being one of my favourite cookies of all time. The high quantity of brown sugar means they get softer with age. The coconut flakes also lend a chewiness you’d find in a macaroon, pair that with the crunchy exterior of any good chocolate chip cookie and you have yourself a recipe that defeats the object of my Perfectly Rounded Chocolate Chip Cookie Post. You might not believe it but, yes, you can have chewiness without a tablespoon of corn flour.


Dust White and Dark Chocolate Chip Coconut Cookies 

Adapted from Forgiving Martha's Boca Fiesta Cookies 

295g unsalted butter
100g (1/2 cup) caster sugar 
275g (1 1/4 cup) brown sugar 
2 large eggs 
1 tsp vanilla 
355g (2 1/4 cup) plain white flour 
1 tsp sea salt
1 tsp baking powder
1 tsp baking soda
180g (1 cup) white chocolate chips
180g (1 cup) dark chocolate chips 
3/4 cup desiccated coconut
Edible Lustre Dust Radiant Gold

Note: You can give your edible gifts an edible sparkle with Sugarflair's Radiant Gold Lustre Dust, which you can buy at most cake decorating stores, or online, here :) Other dusts may or may not be edible, especially if it says 'Adible' on the tin. 

Method

Whisk together all the dry ingredients in a bowl. Beat the butter and sugars together with an electric whisk until light in colour. Add eggs & vanilla and mix until combined. Reduce speed, add the dry ingredients. Fold coconut and chocolate chips in, don't over-mix!

Wrap in cling film and chill for 2 hours, or overnight.  Preheat oven to 180 C. Weight out 75 grams of dough and roll into a chode-like cylinder. Place cookies 3 inches apart on lined baking trays. Bake for 12 minutes. Leave to stand and cool. Brush with gold lustre dust, if desired. Eat within 3 days!
Why I know this cookie is worthy of gifting:
I brought all of them to my room, where they due to endure an amateurs photoshoot. I thought I’d give the cookies a bit of a pre shoot break before going under the Canon, i.e. I completely forgot about them and did something else. I noticed Poppy (the dog) had gone missing so I checked my room and noticed there was a cookie missing. Of course, I found her hiding in my mother’s bedroom looking completely unapologetic about the pile of crumbs she left behind.
